National Cinnamon Crescent Day - April 10th

April 10th is National Cinnamon Crescent Day
here's a recipe to help you celebrate... ENJOY!!

Cinnamon Crescents:

Ingredients:


1 package of canned crescent rolls
Melted butter
Brown sugar to taste
Ground cinnamon to taste
Chopped pecans to taste

Preparation:

Unroll the triangles from a package of canned crescent rolls. Brush the inside of each triangle lightly with some melted butter. Add some brown sugar to each triangle. Sprinkle with enough cinnamon to lightly cover the sugar. Place chopped pecans on each as generous or sparse as you like. Start at the wide end of the triangle and roll up and curve inwards. Top each with a nice, single pecan half. Brush lightly with more butter and bake at 400 degrees for 8 to 10 minutes. Top with any white icing glaze of your choice.

Swedish Oven Pancakes for Brunch or Lunch

Your tip for April 10, 2006 - SWEDISH OVEN PANCAKES FOR BRUNCH OR LUNCH

Swedish Oven Pancakes

Ingredients:

3 Slices of Bacon
2 Cups Milk
¾ Cup Flour
2 T. Sugar
3/4 Tsp. salt
3 Eggs
1/2 Pint Whipping Cream
1 Jar Lingonberries or 2 Packages frozen Raspberries

In a large cast iron skillet about 9 inches in diameter, sauté Bacon until crisp. (Do not pour off drippings). Sift flour, measure, then sift again with sugar and salt. Beat eggs lightly with milk. Stir into dry ingredients, mixing until smooth. Pour batter over the crisp bacon drippings in skillet and bake in a moderate oven 350 degrees, 20-30 minutes until set and golden brown. Pancake will be high and fluffy and will fall immediately, therefore serve right out of the oven. While pancake is cooking whip cream, add 2 Tsp. Powdered Sugar andfruit. Place a dab of this concoction on each serving. This is very
rich and needs a light fruit salad or fresh fruit as an accompaniment.
