National Raspberry Popover Day - May 3rd

National Raspberry Popovers Day is May 3rd
here's a recipe to help you celebrate... ENJOY!!

Simple Popovers with Raspberry Sauce
2 eggs
1 cup Gold Medal all-purpose flour
1 cup milk
1/2 teaspoon salt

Heat oven to 450 F.

Generously grease 6-cup popover pan or six 6-ounce custard cups.

Beat eggs slightly in medium bowl. Beat in remaining ingredients just until smooth (do not overbeat). Fill cups about 1/2 full.

Bake 20 minutes.

Reduce oven temperature to 350 F. Bake about 20 minutes longer or until deep golden brown. Immediately remove from cups. Serve hot.

*Do not use self-rising flour in this recipe.

Makes 6 popovers

Raspberry Sauce

1 cup fresh or frozen raspberries sugar to taste
- 2 tbsp raspberry, strawberry, or cherry liqueur

Bring the berries and sugar to the boil in a saucepan. Cook for a few minutes, until the berries are crushed, releasing their juices.

Cook the sauce for a bit longer if you want it to be thicker. Pass the sauce through a strainer, add the liqueur and serve warm or chilled. The liqueur may be omitted.
