Alcoholics Anonymous - Cooking with Alcohol


Your tip for May 10, 2006 - ALCOHOLICS ANONYMOUS – COOKING WITH ALCOHOL

Alcoholics Anonymous says only 60 percent of the alcohol used in cooking burns off, so a friend sent the following tips for substitutes.

Unless specified otherwise, use substitute in the same quantity as you would use the alcohol.

Sweet or semi-sweet wine: carbonated cranberry drink.

Dry red wine: 1/2 cup carbonated cranberry drink plus 1 tablespoon lemon juice.

Dry white wine: 1/2 cup white grape juice plus 1 tablespoon white vinegar.

Sweet white wine: 1/2 cup white grape juice plus 1 tablespoon light corn syrup.

Brandy: 1/4 cup apple juice plus 2 tablespoons brandy flavoring or peach or apricot syrup. Buy oil-based flavorings at a health food store in place of alcohol extracts.

Sweet sherry: orange or pineapple juice with a dash of peach syrup.

Amaretto: 1/4 cup apple juice plus 1 tablespoon light corn syrup and 1 tablespoon almond extract.

Kirsch: Cider or syrup from cherries, boysenberries or currants.
