Pears Belle Hélène

Ingredients: 1 1/2 cups sugar
2 cinnamon sticks
2 whole cloves
6 pears, peeled and cored
6 scoops vanilla ice cream
1 cup callebaut chocolate
6 strawberries, fanned

Directions:

Combine the sugar, cinnamon, and cloves in a large pan with 3 cups water, stir over low heat until the sugar dissolves, then bring the syrup to a boil.

Add the pears and simmer for 10 minutes, or until tender.

Remove the pears with a slotted spoon and leave to cool .

Place the chocolate in a bowl and over a double boiler until melted, blend.

Put a scoop of ice cream in each serving bowl and make a hollow in each scoop with the back of the spoon. Stand the pears in the hollow and drizzle chocolate sauce over.

Garnish with a fanned strawberry. To make a fanned strawberry simply make slices through the strawberry 1/8 of an inch across and 3/4 of the way down the berry. Press with your thumb across the top of the berry to fan
